What You Need:

To Make:
Dump everything in the pot. Pressure cook 10 mins, natural release 10. Shred chicken if whole. Top with avocado or Greek yogurt!
Tuesday: Garlic Parmesan Quinoa with Veggies
Time: 20 min
What You Need:

1 cup quinoa (rinsed)

1.75 cups veggie broth

1 zucchini (chopped)

1 bell pepper

2 cloves garlic (minced)

1/4 cup shredded parmesan
To Make:
Add everything except parmesan. Pressure cook for 1 min, then natural release 10. Stir in cheese at the end.
Wednesday: Instant Pot Teriyaki Salmon + Rice
Time: 20 min
What You Need:

2 salmon fillets

1 cup jasmine or brown rice

1.25 cups water

1/4 cup low-sodium teriyaki sauce

Optional: steamed broccoli on the side
To Make:
Add rice + water. Place salmon on trivet, drizzle teriyaki. Pressure cook 4 mins, natural release 10.
Thursday: Lentil & Sweet Potato Stew
Time: 30 min
What You Need:

1 sweet potato (diced)

1/2 onion (chopped)

2 carrots (chopped)

3 cups broth

1 tsp cumin, garlic powder, paprika
To Make:
Dump all in pot. Pressure cook 15 mins, natural release 10. Super hearty and vegan-friendly.
Friday: Turkey Meatballs & Zoodles
Time: 25 min
What You Need:

1 lb ground turkey (form into meatballs with seasoning)

1 cup marinara sauce

1/2 cup water

Spiralized zucchini noodles (zoodles)
To Make:
Place meatballs in sauce + water. Pressure cook 8 mins, quick release. Serve over sautéed zoodles or mix them in at the end.
